Origin of Cheese Sticks

The first mention of it can be traced back to Paris, France, in the late 14th century. A recipe for a breaded cheese sticks dish called pip farce can be found in the Le Menagier de Paris cookbook. However, the recipe called for the use of muenster cheese instead of mozzarella.

Ingredients

  • 1 pkg mozzarella string cheese sticks
  • 2 eggs
  • 1 cup bacon bits
  • 1 cup panko italian bread crumbs
  • 1 tbsp dried parsley
  • 1 tsp garlic powder
  • 1 cup all-purpose flour
  • 2 tbsp milk
  • 2 tbsp butter
  • 3/4 cup pizza sauce for dipping

Instructions

  • Unwrap string cheese and cut in half
  • Place bacon bits in a food processor and pulse until bacon bits are evenly chopped.
  • Add panko, dried parsley and garlic powder in food processor and pulse until mix.
  • Empty contents of food processor into a dry bowl.
  • Beat together eggs and and milk in a second bowl
  • Place flour into a third bowl a roll each piece of cheese in the flour.
  • Dip the flour coated cheese sick in egg batter and then roll in bread crumb mixture.
  • Place prepared cheese sticks in freezer for 30 minutes.
  • Preheat oven to 400 degrees
  • Remove cheese sticks from freezer and place on a parchment paper lined cookie sheet.
  • Melt butter and drizzle over cheese sticks
  • Bake in 400 degree oven for 8-10 minutes
  • Serve with pizza sauce or marinara sauce for dipping.

Origin

The blooming onion was probably invented in the mid 1980s in New Orleans, a city no stranger to ultra-rich fried foods, at Russell’s Marina Grill, where it still goes by the name of “onion mum.” The founder of Outback Steakhouse worked at Russell’s at the time.

Ingredients

  • 1 large yellow onion
  • 3 large eggs
  • 1 cup bread crumbs
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt

dipping sauce

  • 2/3 cup mayonnaise
  • 2 tbsp katchup
  • 1 tsp horseradish
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • kosher salt

Instructions

  • Slice off onion stem and set onion on flat side. Cut an inch from the root down, into 12 to 16 sections, being careful not to cut all the way through.
  • Put the onion into an iced water bath for 2 minutes, carefully spread the onion petals apart and away from the center.
  • In a shallow bowl, whisk together eggs and 1 tablespoon water. In another shallow bowl, whisk together breadcrumbs and spices. Dip onion into egg wash, then dredge in breadcrumb mixture, using a spoon to fully coat. 
  • Place in basket of air fryer and cook at 375° for 20 minutes. (See baking method in notes below.)
  • Meanwhile make sauce: In a medium bowl, whisk together mayonnaise, ketchup, horseradish, paprika, garlic powder, and dried oregano. Season with salt.

Notes

NOTE there is a baking option also. Preheat your oven to 400 degrees. Set onion on prepared baking sheet and bake until golden and tender, 18 to 20 minutes.

Origin of the Onion

Ingredients

  • 4 strips bacon
  • 2 large sweet onions halved and thinly sliced
  • 1 pinch granulated sugar
  • 1 tbsp sherry vinegar
  • 1/2 tsp dried thyme
  • 3/4 cup swiss cheese grated
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • kosher salt and black pepper to taste

Instructions

  • Preheat oven to 400°F.
  • In a large skillet over medium-high heat, cook bacon. Remove to a paper towel-lined plate to drain.
  • Add onions, sugar, and a pinch of salt to skillet and cook until soft and starting to turn golden, about 8 minutes, stirring occasionally.
  • Reduce heat to medium and continue cooking, stirring frequently, until onions are a deep golden brown, about 20 minutes.
  • Stir in vinegar and continue cooking, stirring frequently, until vinegar is reduced by half. Add thyme and stir to combine. Remove from heat.
  • In a medium bowl, stir together sour cream, mayonnaise, and cheese. Crumble bacon into pieces and add along with the onions. Season to taste with salt and pepper and stir to combine.
  • Transfer to a small baking dish or ovenproof skillet (2 cup capacity) and bake until mixture is bubbly and top is golden brown, about 20 minutes.

Ingredients

  • 1 1/4 lb sirloin steak cut into small cubes
  • 1 tbsp olive oil
  • 2 tbsp butter
  • salt and pepper to taste
  • 1 tbsp parsley minced

Instructions

  • Heat the olive oil in a large pan over high heat. Season the steak with salt and pepper to taste.
  • Place the steak in the pan in a single layer; you may have to work in batches depending on the size of your pan. Cook for 3-4 minutes, stirring occasionally, until golden brown. Repeat with remaining meat if needed.
  • Add the butter and garlic to the pan; cook for 1-2 minutes, stirring to coat the meat in the sauce.
  • Sprinkle with parsley and serve.

Notes

If you don’t have sirloin, you can also use tenderloin, rib eye, or strip steak.

Ingredients

  • 18 chicken wings
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp chili powder
  • 1/2 tsp pepper
  • cooking spray

Sauce

  • 1 cup bbq sauce
  • 1/2 cup honey
  • 2 tbsp hot sauce wimps can skip
  • 4 tbsp butter
  • 1/2 tsp garlic powder

Instructions

  • Preheat your oven to 425 degrees.
  • In a small bowl, mix together flour, salt, garlic powder, chili powder and black pepper.
  • Wash, dry, and dip the wings into the flour mixture until coated.
  • Cover a cookie sheet with foil and spray with a generous spray of cooking spray.
  • Place the wings in a single layer on the cookie sheet, and place in the oven.
  • Cook for 35-40 minutes, depending on the size of the wings, turning once.
  • While they are baking, make the sauce by slowly simmering the sauce ingredients over the lowest heat.
  • When the wings are done baking, carefully dip them in the sauce, and place them back in the oven for another 5 minutes, or until the sauce is bubbling.

Ingredients

  • 6 hot dogs
  • 6 hot dog buns
  • 1/2 cup onions chopped
  • 15 oz can chili
  • 1 cup cheddar cheese shredded

Instructions

  • Heat oven to 350 degrees F. Grease 9 x 13-inch baking dish.
  • Heat hot dogs according to package directions. Arrange hot dog buns in baking dish, cut side up. Place hot dogs in buns. Top with chopped onions and chili. Sprinkle with cheese. Tent pan with foil.
  • Bake 15 to 20 minutes or until hot and cheese is melted.

Notes

Depending on the brand of chili you may want to heat it slightly to make it easier to pour over the hot dog.
