Bread Pudding – Love this blast from the past

Bread Pudding – A pudding being made only with boiling water, sugar, and spices. This is one of my favorite desserts.

Origin

Frugal cooks in 11th and 12th century England, where it originated, could only afford to soak the bread in hot water before squeezing it dry and then adding a mix of whatever sugar and spices they had on hand.

Ingredients

  • 4 beaten eggs
  • 2 1/4 cups milk
  • 1/2 cup sugar
  • 1 tbsp vanilla
  • 1 tsp finely shredded orange peel optional
  • 1/2 tsp ground cardamom or cinnamon
  • 4 cups dry french bread or regular bread cubes
  • 1/3 cup tart red cherries, cranberries or raisins

Instructions

  • In a bowl beat together eggs, milk, sugar, vanilla, orange peel and cardamom or cinnamon.
  • In an ungreased 2 quart square baking dish toss together bread cubes and dried fruit
  • Pour egg mixture evenly over bread mixture
  • Bake in 350 degree oven for 40 to 45 minutes or until a knife inserted near the center comes out clean.
  • Cool slightly serve warm top with whipped cream.

This banana bread is moist and delicious with loads of banana flavor!

Origin

Banana bread is thought to have originated in the United States in the early 1900s. What is this? One theory is that it was created by enterprising housewives who were looking for ways to use up overripe bananas before they went bad.

Another theory suggests that it was created by companies that were looking for ways to promote the sale of their newly developed baking powder.

Whatever its origins, there’s no denying that it is a delicious part of American culinary history.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs beaten
  • 2 1/3 cups mashed over ripen bananas

Instructions

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
  • In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
  • Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

Ingredients

  • 1 cup corn meal
  • 1/3 cup flour
  • 2 tbsp sugar
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp minced onion (optional)
  • 1 egg
  • 1/2 cup butter milk
  • Oil for frying need at least 3 inches in saucepan so the hush puppies will float.

Instructions

  • Preheat your oil to 350 degrees
  • Combine dry ingredients
  • Beat egg. Add to dry mixture with most of the buttermilk adding more as needed to create a dough that is moist but not runny.
  • Drop mixture by teaspoon in hot oil. Cook 3-5 minutes until golden, turning once during cook time.
  • Place on paper towel to cool. Serve with honey butter.

Cinnamon Apples – I remember these as a child. They are great for breakfast or a side dish with pork.

Origin

According to FoodandWine.com, Candymaker William W. Kolb supposedly invented them in 1908 in New Jersey. He was trying to sell cinnamon candies for Christmas when he decided that dipping apples in the candy would be a fantastic way to showcase the candy.

Country Biscuits and Gravy – Although the recipe is Biscuits and Gravy it really is a recipe for Country Sausage Gravy.

Origin

The history of the dish is debated, with some believing that it originated during the Revolutionary War while others trace the dish to Southern Appalachian lumber mills in the 1800s, hence the name sawmill gravy. Its readily available ingredients and hearty nature made it an affordable staple for the low-income working class.

  • 1 lb sausage ground Prefer Jimmy Deans

Origin of Spinach

Spinach (Spinacia oleracea) is a hardy annual related to beets and Swiss chard that has been used by humans for a long time. Native to southwest Asia, it was first cultivated in Persia (Iran) over 2000 years ago and used by the Chinese in the 6th century.

Ingredients

  • 1 tbsp butter
  • 1/4 cup finely chopped onion
  • 1 clove garlic minced
  • 1 package 8 oz cream cheese cut up
  • 1/4 cup milk
  • 1 package frozen chopped spinach, thawed and well drained
  • 1/4 tsp finely shredded lemon peal
  • 1 tbsp lemon juice
  • 2 tsp Worcestershire sauce
  • 4 slices pre-cooked bacon and crumbled or 1/4 cup finely chopped red sweet pepper
  • 2 tbsp milk

Instructions

  • In a medium saucepan melt butter over medium heat
  • Add onion and garlic cook until onion is tender stirring occasionally
  • Add cream cheese and 1/4 cup of milk. Cook until smooth.
  • Stir in the spinach, lemon peel, lemon juice, Worcestershire sauce. Heat thoroughly.
  • Stir half the bacon or red sweet pepper an the 1 or 2 tbsp of milk to reach the desired dipping consistency.
  • Transfer to serving bowl and sprinkle remaining bacon or sweet pepper.
  • Serve warm with assort dipping vegetables or cracker or baget. Makes 1 1/2 cups
